Migas in Spanish means Scraps. We love it!!
Quick and easy, and won't heat up your kitchen on these hot Summer days.
Take corn tortillas, cut, and lightly saute in pan. Don't have tortillas, you can use flour tortillas, corn chips, or tortilla chips.
Add some green chilie, (you can use onions, bell peppers, tomatoes, anything you have). Saute in pan with tortillas.
Then, it doesn't get any easier than this, throw in some eggs to scramble, (mix in cup or bowl first).
Top with, your choice of: Avocado, Chile, Sour Cream, Salasa, More Veggies!!
These make a great traveling breakfast or lunch. Put in a cup, or plastic container, they are easy to eat, not too messy, and ready when you are.
